The Best Cookie Ever, maybe!
 Big words, try them and let me know what you think. These are a favorite ride/recovery food for me.

3/4 cup + 1 Tbsp AP Flour
1 Tbsp Whole Wheat Flour
1 Tbsp ground Flax seed
1/4 cup ground Oat flakes
pinch of Salt
pinch of Cinnamon
pinch of espresso powder

4 oz Butter at room temperature
2.5 oz Sugar
2.5 oz Brown Sugar
1 Tbsp Honey
1/2 tsp Vanilla extract
1 large Egg

1//2 cup Milk Chocolate Chips
1/2 cup Dark Chocolate Chips

Combine dry ingredients, set aside. Cream wet ingredients together, add to dry ingredients, mix together, add chocolate chips and stir to incorporate.
Bake at 375 deg for about 12 min.


    Pickling
Beans, Garlic, Carrots, Pearl Onions, Brussels Sprouts, and Beets first attempt all very tasty!
 

   Ciabatta
I love bread, and Ciabatta is my favorite style, for years I have struggled to make loafs like I experienced in Italy. Then I met Stephanie at the Oregon Outback in 2014. Stephanie is owner/operator of Sugar Bakery & Cafe and she was in Klamath Falls Oregon as pre ride support for her friend, we all met at The Creamery a watering hole in Klamath Falls, Hog Boy and I had agreed we wouldn't drink the night before our ride, well that didn't happen! Any way,  some how amongst the beer and Bourbon Stephanie and I began talking about bread specifically Ciabatta. Below is her recipe.

Poolish
4 1/4 oz AP Flour
4 1/4 oz water                           mix together well and let sit over night
pinch of yeast

Dough
8 1/2 oz Bread Flour
4 oz AP Flour
9 oz water
1/3 tsp. Salt
1 g Yeast
Poolish

Bring Dough ingredients together quickly and mix until just combined, let rise until increased in volume 50% , fold in half, repeat twice more. Split Dough into two and form loafs let rise until increased in volume 50%, bake at 500

The loaf on left had the 4oz AP Flour swapped out for Whole Wheat Flour





   Coffee
Coffee, my drug of choice, some encourage me to drink lots of it, they, perhaps, are not my true friends. If my drug of choice was heroin or crack would they push the needle or pipe on me? Coffee is a drug and it's effect on me is legendary, ask Hogboy, Ryan, the Kid, Geoff or Old Man Holden. I perhaps should not drink coffee, but like any addict, I am drawn to it, I need it. I have been a binge drinker, I have consumed entire pots of coffee, solo, alone, quickly. I have been a responsible drinker, a lone late, maybe a Doopio Espresso, or a classic cup of black Joe and I am good for the day. Paraphernalia is hidden about my home, I have no less than four  French presses, two stove top espresso makers, a drip machine, an air pot etc, much more coffee making capability than one man, one cat, one fish, an occasional visiting dog and six chickens could possibly use.
Currently I make my morning espresso using Aroma Coffee dark roast 50% decalff blend. I like it, a lot, it is my methadone. I brew espresso on my camp stove because, it allows me to use up those cartridges that are almost empty that would never make it back into a pack and the burner is a much better size than on my gas range.



   EGGS!
I have been experimenting with  egg dishes, after all my girls produce 6 every day!
